Hmm... I don't have the game any more, but I think I remember the classic cars being unlocked if you win races in championship mode.

Yeah, it's a combination of winning the championship and doing the time trials.
I also seem to remember that if you get bronze in all the time trials then you unlock Jerez. It's been soo long since I played it. |
